  • 2 cups full-fat plain Greek yogurt
  • 1 cup about 4 oz / 115 g fresh raspberries
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh orange juice
  • Zest of ½ a lemon
  • Zest of ½ an orange
  • 1 tablespoon hemp hearts for garnish

Method
 

  1. Prepare the Pan : Line a 13x9-inch baking pan with a silicone mat or a sheet of parchment paper, ensuring there is a slight overhang on the sides to make lifting easier later.
  2. Zest the Citrus : Finely grate the zest from half a lemon and half an orange. Set aside about one-third of the combined zest for the final topping.
  3. Create the Yogurt Base : In a medium mixing bowl, use the spatula to briefly whisk the Greek yogurt until it is smooth and creamy.
  4. Infuse the Flavors : Pour the maple syrup, lemon juice, orange juice, and almond extract into the yogurt. Add the larger portion of the citrus zest. Stir thoroughly until all the ingredients are fully incorporated and the mixture is uniform.
  5. Assemble the Bark : Pour the flavored yogurt mixture into the center of your prepared pan. Use the spatula to spread it into an even layer, approximately ¼-inch thick.
  6. Garnish and Top : Artfully scatter the fresh raspberries and hemp hearts across the surface of the yogurt. Sprinkle the reserved citrus zest evenly over the top for a final burst of aroma and color.
  7. Freeze Until Solid : Carefully place the pan flat in the freezer. Freeze for a minimum of 4 hours, or until the bark is completely firm to the touch and snaps easily.
  8. Serve or Store :Once frozen solid, use the parchment or mat overhangs to lift the entire slab from the pan. Break the bark into irregular, shard-like pieces by hand. Serve immediately or transfer to a freezer-safe container for storage.

Notes

Storage: Store the frozen yogurt shards in an airtight container or freezer bag with parchment paper between layers to prevent sticking. They will keep well in the freezer for up to 3 weeks.
Ingredient Swaps: Feel free to use other berries like sliced strawberries or chopped mangoes. For a nuttier flavor, swap the hemp hearts for toasted chopped pistachios or sunflower seeds. Agave nectar can be used in place of maple syrup.
Serving Tip: For a creamier, less brittle texture, allow the bark to sit at room temperature for 5–10 minutes before breaking it into pieces and serving.
