Ingredients
  

  • 1.5 pints cherry or grape tomatoes
  • 1 large bunch fresh basil washed, leaves picked, approx. 75-80 leaves needed
  • 12 ounces fresh mozzarella balls pearl or ciliegine size, drained
  • 3-6 tablespoons balsamic glaze use store-bought or homemade
  • Freshly ground black pepper to taste (optional)
  • Approx. 36-40 small skewers cocktail picks, or sturdy toothpicks

Method
 

  1. Prepare Ingredients: Gently rinse tomatoes and slice them in half. Drain the mozzarella balls well; halve any that are significantly larger than the tomato halves. Wash and gently pat dry the basil leaves. For very large leaves, fold them or tear/slice them to a manageable size, roughly matching the mozzarella balls.
  2. Assemble Skewers: Take one skewer or pick. Thread on a tomato half, followed by a folded basil leaf, then a mozzarella ball. Repeat the sequence: add another tomato half, another basil leaf, and a final mozzarella ball.
  3. Arrange: Place the completed skewer on a serving platter. Continue assembling the remaining skewers until all ingredients are used, arranging them nicely on the platter.
  4. Serve: Just before serving, drizzle the balsamic glaze evenly over the arranged skewers. If desired, add a light sprinkle of freshly ground black pepper. Serving Tip: If preparing ahead, assemble the skewers and refrigerate covered. Add the glaze and pepper immediately before serving for best results.
