Halloween Deviled Eggs with Smoked Paprika

Recipe by Ailene

Naturally green avocado and egg yolk filling gets piped high, dusted with fiery orange smoked paprika, and crowned with black olive spiders for a spooky platter that takes zero food coloring. Tangy lime juice and Dijon mustard keep every bite bright, creamy, and rich.

  • Total Time35 minutes
  • Yield12 deviled egg halves (serves 6) 1x

Ingredients

Scale

Eggs and Avocado Filling

  • 6 large eggs (about 10.5 oz / 300 g)
  • 1 medium ripe Hass avocado (about 5 oz / 140 g peeled and pitted)
  • 3 tablespoons (45 g) mayonnaise
  • 1 tablespoon (15 ml) fresh lime juice
  • 1 teaspoon (5 g) Dijon mustard
  • ½ teaspoon (3 g) kosher salt

Spider Topping and Garnish

  • ¼ teaspoon (0.5 g) smoked paprika
  • 15 large pitted black olives (about 2.5 oz / 70 g), drained and patted dry

Instructions

  1. Boil the eggs: Bring a medium saucepan filled with 3 inches (7.5 cm) of water to a rolling boil over high heat. Gently lower the cold eggs into the water with a slotted spoon, reduce the heat to a steady simmer, and cook for 10 minutes until the yolks are set but still tender.
  2. Chill and peel: Transfer the eggs immediately to a bowl of ice water and cool for 10 minutes. Tap each shell all over against the counter, roll gently under your palm to loosen the membrane, and peel under cool water. Slice the eggs in half lengthwise, pop the yolks into a medium bowl, and arrange the 12 egg white halves cut-side up on a platter.
  3. Whip the green filling: Add the peeled avocado, mayonnaise, lime juice, Dijon mustard, and kosher salt to the bowl with the yolks. Mash vigorously with a sturdy fork for 2 to 3 minutes (or press through a fine-mesh sieve and stir) until smooth, thick, and evenly pale green.
  4. Pipe and dust: Spoon the avocado mixture into a piping bag or a zip-top bag with a ½-inch (1.3 cm) corner snipped off. Pipe tall mounds into the egg white cavities, then dust the green tops lightly with the smoked paprika for an orange-and-green contrast.
  5. Assemble the olive spiders: Slice all 15 black olives in half lengthwise to get 30 halves. Set 12 intact halves cut-side down in the center of each filled egg to form the spider bodies. Cut the remaining 18 olive halves crosswise into thin curved strips and press 4 strips onto each side of every body so each spider has 8 legs. Serve right away.

Notes

  • Why it works: Mashing a single ripe avocado directly into the cooked yolks turns the filling cauldron-green without liquid food dye, while an extra 3 olives in the batch give you spare halves so you aren’t trying to cut paper-thin spider legs that tear.
  • Make-ahead and storage: If prepping ahead, press plastic wrap directly against the surface of the avocado-yolk mash inside the piping bag, and cover the platter of egg white halves tightly. Refrigerate both for up to 6 hours, keeping the egg whites covered and chilled until you are ready to pipe and garnish just before guests arrive. Never leave the egg whites or finished deviled eggs out of refrigeration for more than 2 hours—or 1 hour if the temperature exceeds 90°F (32°C).
  • Smoother texture: Choose an avocado that yields to gentle thumb pressure—firm fruit leaves pale green lumps that clog the piping bag corner.
