  • 1 cup (4 ounces / 115 g) freshly shredded extra-sharp yellow cheddar cheese
  • ¾ cup (180 g) full-fat sour cream, warmed to room temperature

Garlic-Butter Swirl and Toppings

Instructions

  1. Microwave the potatoes: Prick the scrubbed potatoes all over with a fork so steam can escape. Place them in a single layer on a microwave-safe plate and microwave on high, flipping them halfway through, for 15 to 17 minutes until the centers yield easily to the tip of a paring knife. Let stand on the counter for 5 minutes until cool enough to handle.
  2. Crisp the bacon: While the potatoes cook, place the chopped bacon in a 5- to 6-quart (5- to 5.5-L) Dutch oven over medium heat. Cook, stirring often, for 8 to 10 minutes until deep golden brown and crisp. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, and pour off all but 2 tablespoons (30 mL) of the rendered drippings from the pot.
  3. Cook the aromatics and simmer the base: Add the chopped onion to the hot bacon drippings and cook over medium heat, stirring occasionally, for 6 to 7 minutes until translucent and tender without browning. Stir in the 2 grated garlic cloves for the soup base and cook for 1 minute until fragrant. Pour in the whole milk, chicken broth, kosher salt, and black pepper.
