Lentil Bolognese

  • 2 tablespoons extra-virgin olive oil
  • 1 large yellow onion, finely diced
  • 2 medium carrots, finely diced
  • 8 ounces (225 g) cremini mushrooms, very finely chopped (pulse in a food processor for the best texture)
  • 1 ½ teaspoons kosher salt, divided
  • 4 large cloves garlic, minced
  • 1 (6-ounce / 170 g) can tomato paste
  • ½ cup (120 ml) dry red wine (or substitute extra vegetable broth)
  • 1 (28-ounce / 795 g) can crushed tomatoes
  • 2 cups (480 ml) vegetable broth
  • 1 cup (200 g) brown or French green lentils, rinsed and picked over
  • 2 teaspoons dried oregano
  • ½ teaspoon crushed red pepper flakes
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons unsalted butter (or vegan butter)

Instructions

  1. Sauté the vegetables: Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the onion, carrots, mushrooms, and 1 teaspoon of the kosher salt. Cook, stirring occasionally, for 6 to 8 minutes, until the vegetables are softened and the mushrooms have released and cooked off their moisture.
  2. Caramelize the tomato paste: Push the vegetables to the edges of the pot. Drop the tomato paste and minced garlic into the center. Cook for 2 to 3 minutes, stirring the paste constantly until it darkens to a brick-red color and smells toasted, then mix it thoroughly into the vegetables.
  3. Deglaze the pot: Pour in the red wine. Scrape up any browned bits from the bottom of the pot with a wooden spoon. Let it bubble and reduce for 1 to 2 minutes until the sharp alcohol smell cooks off and the liquid is mostly evaporated.
  4. Simmer the sauce: Stir in the crushed tomatoes, vegetable broth, lentils, dried oregano, crushed red pepper flakes, and the remaining ½ teaspoon of kosher salt. Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low, partially cover the pot, and simmer for 30 to 35 minutes. Stir occasionally to prevent sticking, until the lentils are completely tender and the sauce has thickened.
  5. Cook the pasta: While the sauce simmers, bring a large pot of heavily salted water to a boil. Cook the pasta according to the package directions until al dente. Before draining, carefully scoop out and reserve about ½ cup of the starchy pasta water. Drain the pasta.
  6. Finish and combine: Remove the bolognese from the heat. Stir in the balsamic vinegar and the butter until the butter completely melts, giving the sauce a glossy finish. Add the drained pasta directly into the pot with the bolognese, tossing gently to coat. If the sauce feels too thick, splash in a little of the reserved pasta water until it reaches your desired consistency. Serve warm, topped with Parmesan and fresh basil.
