  • 2 medium acorn squash, halved vertically and seeded
  • 1 tablespoon olive oil

Turkey Chili Filling

  • 1 medium yellow onion, diced
  • 1 pound 93% lean ground turkey

Instructions

  1. Prep the squash bowls: Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper. Rub the cut edges and hollowed centers of the squash halves evenly with the olive oil, then sprinkle with the salt and smoked paprika. Place them cut-side down on the prepared baking sheet. Roast for 25 to 30 minutes, or until the flesh is very fork-tender and the edges are caramelized.
  2. Brown the aromatics and turkey: While the squash roasts, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 4 minutes. Add the ground turkey, breaking it apart with a wooden spoon or spatula. Cook until completely browned and no pink remains (an instant-read thermometer should register at least 165°F), about 5 to 6 minutes.
  3. Bloom the spices: Stir in the garlic, chili powder, cumin, smoked paprika, and salt. Cook for 1 minute until highly fragrant. Add the tomato paste and stir continuously for 1 to 2 minutes until it darkens slightly and coats the meat.
