  • 3 tablespoons (45 ml) olive oil or neutral cooking oil
  • 1 large yellow onion, roughly chopped
  • 1 teaspoon kosher salt, divided
  • 4 large garlic cloves, smashed

  • 1 teaspoon chopped fresh thyme (or ½ teaspoon dried thyme)
  • ½ teaspoon freshly ground black pepper
  • 2 pounds (900 g) peeled and cubed butternut squash (about 6 cups; pre-cut saves time)
  • 3 cups (710 ml) vegetable or chicken broth
  • 2 tablespoons (30 g) white miso paste

Instructions

  1. Sweat the aromatics: Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the chopped onion and ½ teaspoon of the kosher salt. Cook, stirring occasionally, until the onions are translucent and completely softened, about 6 to 8 minutes.
  2. Bloom the spices: Stir in the smashed garlic, grated ginger, thyme, and black pepper. Cook for about 1 minute until highly fragrant, stirring constantly so the garlic doesn’t scorch.
  3. Simmer the squash: Add the cubed butternut squash, the broth, and the remaining ½ teaspoon of salt. Bring the liquid to a rolling boil, then immediately reduce the heat to medium-low. Cover the pot and simmer gently for 20 to 25 minutes, or until the squash is very tender and easily crushed against the side of the pot with a wooden spoon. Remove from heat.
  4. Blend and finish: Ladle about ½ cup of the hot cooking liquid into a small bowl. Add the white miso paste to the bowl and whisk until completely smooth. Pour the miso slurry back into the pot. Using an immersion blender, puree the soup until completely velvety and smooth. If using a countertop blender instead, let the soup cool slightly, then blend in batches. Fill the jar no more than halfway and vent the lid according to the manufacturer’s instructions for hot liquids.
  5. Garnish and serve: Taste for seasoning, adding a little more salt if needed. Ladle the hot soup into bowls and garnish with toasted pepitas, a swirl of cream or coconut milk, and a spoonful of chili crisp for heat.
