  • 1 medium head green cabbage (about 2 pounds), cored and cut into 1 1/2-inch pieces
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven and prep the pan: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet (or two, if your pans are smaller) with parchment paper or aluminum foil.
  2. Season the cabbage and chicken: Place the chopped cabbage on one side of the baking sheet. Drizzle with 2 tablespoons of the olive oil and season with 1/2 teaspoon of the kosher salt and 1/4 teaspoon of the black pepper; toss well to coat. On the other side of the pan, place the chicken breasts. Coat them with the remaining 1 tablespoon of olive oil, the remaining 1/2 teaspoon salt, 1/4 teaspoon black pepper, garlic powder, and onion powder.
  3. Roast: Bake for 20 to 25 minutes, gently tossing the cabbage halfway through. The dish is done when the cabbage edges are deeply charred and tender, and an instant-read thermometer inserted into the thickest part of the chicken reaches 165°F (74°C). Transfer the chicken to a cutting board and let it rest for 5 minutes before chopping.
  4. Toast the panko: While the sheet pan is in the oven, heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the panko breadcrumbs and garlic powder. Cook, stirring frequently, until the panko is deeply golden brown and fragrant, about 3 to 4 minutes. Remove from the heat and immediately stir in the lemon zest. Set aside.
  5. Mix the dressing: In a medium bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, anchovy paste, grated garlic, and 1/4 cup of the Parmesan cheese.
