Crispy-Top Red Curry Dumpling Bake

Recipe by Ailene

This one-pan dinner transforms a standard bag of freezer-aisle dumplings into a bubbling, aromatic curry in about half an hour. By uncovering the baking dish for the final stretch and utilizing the broiler, the dumplings develop a satisfyingly golden, crunchy crown while the bottoms soak up the rich, ginger-spiked coconut broth.

Curry Broth

Dumplings & Vegetables

  • 2 cups roughly chopped baby bok choy (about 2 small heads)
  • 1 bag (16 oz / 450 g) frozen dumplings or potstickers (pork, chicken, or vegetable)

To Finish

  • 1 tbsp neutral oil (like canola or avocado), for brushing
  • 1 tbsp fresh lime juice
  • 2 scallions, thinly sliced
  • ¼ cup fresh cilantro leaves
  • Chili crisp, for serving

Instructions

  1. Prep the base: Preheat your oven to 400°F (200°C). In a 9×13-inch baking dish, whisk together the coconut milk, Thai red curry paste, soy sauce, minced garlic, and grated ginger until the curry paste is fully dissolved and the liquid is smooth.
  2. Assemble the bake: Stir the chopped baby bok choy into the coconut broth to coat the leaves. Arrange the frozen dumplings on top of the greens in a single layer. Press them gently down into the liquid so the bottoms are submerged but the tops remain exposed.
  3. Steam in the oven: Cover the baking dish tightly with aluminum foil. Bake for 20 minutes to gently steam the dumplings and tenderize the greens.
  4. Heat through and crisp: Remove the foil and bake uncovered for 10 to 12 minutes, until the coconut broth is actively bubbling and the internal temperature of the dumplings reaches at least 165°F (74°C). To crisp the exposed wrappers, brush the dumpling tops lightly with the neutral oil and switch the oven to broil for 2 to 3 minutes. Watch closely until they turn deeply golden and crispy.
  5. Garnish and serve: Remove the dish from the oven and immediately drizzle the fresh lime juice evenly over the top. Scatter with sliced scallions and cilantro leaves, and serve hot with chili crisp spooned over individual bowls.

Notes

  • Why it works: Upgrading from delicate spinach to baby bok choy prevents the vegetables from turning to mush in the oven. The two-stage cooking method—covered baking followed by a quick broil—creates a dual texture where the dumplings are tender on the bottom and crunchy on top.
  • Broth consistency: Full-fat coconut milk yields a richer, thicker sauce that beautifully coats the dumplings. You can use reduced-fat coconut milk if preferred, but it has a higher water content and may require slightly more reduction time to thicken.
