  2. Whisk the dry ingredients: In a large bowl, whisk together the all-purpose flour, whole-wheat flour, pumpkin pie spice, baking powder, baking soda, and kosher salt.
  3. Mix the wet ingredients: In a separate medium bowl, whisk the pumpkin puree, Greek yogurt, ½ cup maple syrup, oil, eggs, and vanilla extract until completely smooth and cohesive.
  4. Combine the batter: Pour the wet mixture into the dry ingredients. Use a silicone spatula to gently fold them together just until no dry flour streaks remain. Do not overmix, which can make the bread dense and tough. Spread the batter evenly into the prepared loaf pan.
