  • 3 ounces thinly sliced prosciutto, torn into bite-sized pieces

  • 2 large boneless, skinless chicken breasts (about 1 1/2 pounds total), halved horizontally to make 4 thin cutlets
  • 1/4 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter

Caramelized Apple & Gruyère Sauce

  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 1 large Honeycrisp or Braeburn apple, cored and cut into 1/2-inch slices
  • 3 large garlic cloves, minced
  • 1 tablespoon chopped fresh sage leaves
  • 1 teaspoon fresh thyme leaves
  • 1 cup unfiltered apple cider
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 cup (4 ounces) freshly grated Gruyère cheese


Instructions

  1. Crisp the prosciutto: Heat the olive oil in a large oven-safe skillet over medium heat. Add the torn prosciutto and cook, stirring frequently, until rendered and crispy, 3 to 4 minutes. Using a slotted spoon, transfer the prosciutto to a paper towel-lined plate, leaving the flavored oil in the skillet.
  2. Dredge and sear the chicken: In a shallow dish, whisk together the flour, kosher salt, and black pepper. Coat the chicken cutlets evenly in the flour mixture, shaking off any excess. Add 1 tablespoon of butter to the skillet with the prosciutto oil and increase the heat to medium-high. Sear the chicken until golden brown, 3 to 4 minutes per side. Transfer the chicken to a clean plate (it does not need to be fully cooked yet).
  3. Caramelize the apples and onions: Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Add the sliced onion and apple wedges.   5. Broil and serve: Turn your oven’s broiler to high. Nestle the chicken cutlets (and any resting juices) back into the simmering sauce. Top each cutlet evenly with the grated Gruyère. Place the skillet under the broiler for 2 to 3 minutes, watching closely, until the cheese is melted, bubbly, and beginning to blister. The thickest part of the chicken should register 165°F on an instant-read thermometer. Remove from the oven, scatter the crispy prosciutto over the top, and serve immediately.
