Instructions

  1. Prep the oven and pan: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. Brown the sausage: Heat a large skillet or Dutch oven over medium-high heat. Add the sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through, 7 to 9 minutes. Use a slotted spoon to transfer the sausage to a large bowl, leaving the rendered fat in the pan.
  3. Crisp the sage: Lower the heat to medium. Add the butter to the skillet with the sausage fat. Once melted and bubbling, drop in the whole sage leaves. Fry for about 30 seconds until crisp, then carefully remove them with a fork to a paper towel-lined plate. Carefully spoon out and reserve 1 tablespoon of the infused butter in a small dish for later.
  4. Sauté the aromatics and apple: To the remaining sage-infused butter in the skillet, add the onion, celery, and apple. Sauté for 6 to 8 minutes, stirring occasionally, until the vegetables soften and the apples are tender. Stir in the minced garlic, chopped sage, and fresh thyme; cook for 1 minute until fragrant.
  5. Deglaze the pan: Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Let it bubble and reduce until the liquid has almost entirely evaporated, about 2 minutes. Remove from heat and stir in the chopped parsley. Transfer this vegetable mixture to the bowl with the sausage.
  6. Soak the croissants: Add the dried, torn croissants to the bowl with the sausage and vegetables. In a separate medium bowl, whisk together the chicken broth, eggs, kosher salt, and black pepper. Pour the wet mixture over the croissants and gently fold everything together with a large spatula until the bread absorbs the liquid.
