Toasted Swiss Meringue

  • 3 large egg whites, room temperature
  • 3/4 cup granulated sugar (150g)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar

Instructions

  1. Mix the crust: In a food processor, pulse the flour, cocoa powder, 1 tablespoon granulated sugar, 1/2 teaspoon kosher salt, and espresso powder until combined. Scatter the cold butter cubes over the dry ingredients and pulse 6 to 8 times until the mixture resembles coarse meal with pea-sized butter clumps remaining.
  2. Hydrate and chill: Transfer the mixture to a bowl. Drizzle 3 tablespoons of ice water over the top and toss gently with a fork. Add more water, 1 tablespoon at a time, just until the dough holds together when squeezed. Form into a flat disk, wrap tightly in plastic wrap, and refrigerate for at least 2 hours.
  3. Roast the sweet potatoes: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Halve the sweet potatoes lengthwise and place them cut-side down on the parchment.
