These make-ahead taco bowls use a hands-off Instant Pot braise to turn tough stew meat into melt-in-your-mouth, salsa-infused shredded beef. Layered with seasoned yellow rice, black beans, fire-roasted corn, and cheddar, they stack neatly into five containers for a week of deeply flavorful lunches that reheat beautifully.

Salsa-Braised Beef

  • 1 tablespoon olive oil
  • 1 ½ pounds (680 g) beef stew meat, cut into 1-inch cubes
  • ½ medium yellow onion, diced
  • 3 cloves garlic, minced
  • ½ cup (120 ml) low-sodium beef broth
  • ½ cup (130 g) chunky tomato salsa (mild or medium)
  • 3 tablespoons low-sodium taco seasoning

Bowl Assembly

  • 1 (8-ounce / 226 g) package yellow rice mix (such as Vigo)
  • 1 (15-ounce / 425 g) can black beans, rinsed and drained
  • 1 (15-ounce / 425 g) can fire-roasted corn kernels, drained
  • 1 cup (115 g) shredded sharp cheddar or Mexican-blend cheese
  • 1 fresh lime, cut into wedges (optional)


Instructions

  1. Sear the beef: Turn on a multi-functional pressure cooker (such as an Instant Pot) and select the Sauté function. Heat the olive oil. Working in two batches to avoid overcrowding the pot, add the beef cubes in a single layer and sear until deeply browned on at least two sides, about 5 minutes per batch. Transfer the first batch to a plate while the second batch cooks.
  2. Sauté aromatics and deglaze: Return the first batch of beef and any resting juices to the pot. Add the diced onion and garlic, stirring for 1 to 2 minutes until softened. Pour in the beef broth, using a wooden spoon to scrape up any browned bits stuck to the bottom of the insert. Stir in the salsa and taco seasoning until the beef is well coated.
  3. Pressure cook: Cancel the Sauté function. Close and lock the lid, ensuring the valve is set to the sealing position. Select High Pressure and set the timer for 35 minutes. (It will take about 10 minutes for the pot to come to pressure.)
  4. Cook the rice: While the beef cooks, prepare the yellow rice on the stovetop according to the package directions. Once tender and the liquid is absorbed, remove from the heat, fluff with a fork, and let it cool slightly.
  5. Shred the beef: When the pressure cooking cycle is complete, allow the pressure to release naturally for 15 minutes, then carefully quick-release any remaining pressure. Open the lid and use two forks to gently shred the beef directly into the cooking liquids.
  6. Assemble the bowls: Set out five shallow, reusable meal-prep containers. Divide the cooked yellow rice evenly among them. Using a slotted spoon, top the rice with the shredded salsa-braised beef. Divide the black beans, fire-roasted corn, and shredded cheese evenly across the containers.
  7. Cool and store safely: To ensure food safety, allow the food to cool briefly in these shallow containers, then cover and refrigerate within 2 hours of cooking. Store in the refrigerator for up to 4 days. For the fifth bowl, freeze it to avoid exceeding safe leftover limits, then thaw it overnight in the fridge before you plan to eat it. Include a lime wedge in each container if desired.

Notes

  • Why it works: Braising the beef in a mixture of broth and salsa creates a rich sauce that keeps the meat moist. Equipment note: While ½ cup of broth plus the salsa provides enough liquid for many standard pressure cookers, some models require more thin liquid (up to 2 cups) to safely reach pressure. Check your manufacturer’s manual and increase the beef broth if required.
  • Reheating workflow: To serve, remove the lid (and the lime wedge, if using) and microwave loosely covered. Stop to stir the contents halfway through the cooking time to ensure even heating, continuing until the meal reaches a safe internal temperature of 165°F (74°C). Squeeze the fresh lime juice over the top right before eating to brighten the flavors.
