Coconut Rice

  • 1 cup basmati rice, rinsed well (190g)
  • 1 cup canned unsweetened coconut milk (light or full-fat) (240ml)
  • ½ cup water (120ml)
  • ¼ teaspoon kosher salt

Mango Marinade & Dressing

  • 1 ½ cups diced fresh or frozen/thawed mango (about 1 large mango) (250g)
  • 2 tablespoons avocado oil or neutral cooking oil (30ml)
  • 2 tablespoons lime juice (30ml)
  • 1 ½ tablespoons Sriracha sauce (22ml)
  • 1 tablespoon soy sauce (15ml)
  • 1 tablespoon honey (15ml)
  • 1 tablespoon roughly chopped fresh ginger
  • 3 cloves garlic, smashed
  • ½ teaspoon kosher salt

Chicken & Salsa

  • 1 ½ pounds boneless, skinless chicken breasts, diced into 1-inch pieces (680g)
  • 1 (15-ounce) can black beans, rinsed and drained (425g)
  • 1 ½ cups corn kernels (fresh, canned and drained, or frozen, cooked according to package directions and cooled) (225g)
  • ½ cup fresh cilantro, roughly chopped (20g)
  • ½ cup diced red bell pepper (75g)
  • 3 scallions, thinly sliced
  • 1 tablespoon lime juice (15ml)
  • ½ teaspoon kosher salt

For Serving

  • ¼ cup unsweetened toasted coconut flakes (15g)
  • 1 large avocado (add day-of)


Instructions

  1. Start the coconut rice: In a medium saucepan, combine the rinsed basmati rice, coconut milk, water, and salt. Bring to a gentle boil over medium-high heat. Cover, reduce the heat to low, and simmer for 18 to 20 minutes, or until the liquid is absorbed and the rice is tender. Remove from the heat and let rest, covered, for 5 minutes before fluffing with a fork.
  2. Blend the mango sauce: While the rice cooks, place the diced mango, avocado oil, lime juice, Sriracha, soy sauce, honey, ginger, garlic, and salt in a blender. Blend on high until completely smooth, about 30 to 45 seconds.
  3. Marinate the chicken: Place the diced chicken in a medium mixing bowl. Pour exactly half of the blended mango sauce over the chicken, tossing well to coat. Let it sit at room temperature for 10 to 15 minutes. Transfer the remaining mango sauce to an airtight container and refrigerate immediately to use as a dressing later.
  4. Mix the salsa: In a separate bowl, toss together the black beans, corn, cilantro, red bell pepper, scallions, lime juice, and salt. Set aside.
  5. Caramelize the chicken: Heat a large nonstick or cast-iron skillet over medium-high heat. Add the marinated chicken pieces in a single layer (work in two batches if your pan is crowded). Cook undisturbed for 3 to 4 minutes to develop a deeply caramelized, dark crust. Flip and cook for another 3 to 4 minutes, or until cooked through and an instant-read thermometer registers 165°F (74°C). Remove from the heat.
  6. Assemble the meal prep bowls: Divide the coconut rice evenly among 4 meal prep containers. Top each with a scoop of the black bean salsa and a portion of the caramelized chicken. Cover and refrigerate the bowls for up to 4 days. Pack the toasted coconut flakes separately.
