The Pork

  • 4 bone-in pork chops (about 1 inch / 2.5 cm thick, 810 oz / 225280 g each)
  • 1 tbsp (15 ml) neutral oil (such as avocado or canola), for searing

Hot Honey & Mustard Marinade

  • ¼ cup (60 ml) low-sodium soy sauce
  • 3 tbsp (60 g) hot honey (or 3 tbsp regular honey mixed with ½ tsp crushed red pepper flakes)
  • 1 tbsp (15 ml) apple cider vinegar
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (15 g) whole-grain mustard
  • 3 large garlic cloves, grated
  • ½ tsp coarsely ground black pepper


Instructions

  1. Mix and portion the marinade: In a medium bowl, whisk together the soy sauce, hot honey, apple cider vinegar, olive oil, whole-grain mustard, grated garlic, and black pepper. Crucial step: Transfer 2 tablespoons of this mixture to a small, separate bowl and set it aside in the refrigerator. This will be your clean finishing glaze.
  2. Marinate the pork: Place the pork chops in a large zip-top bag or a shallow glass dish. Pour the remaining marinade over the meat, turning the chops to ensure they are fully coated. Seal or cover, and refrigerate for at least 1 hour, or up to 12 hours for deeper flavor.
