Extra-Crispy Baked Chicken Drumsticks

Recipe by Ailene

A simple wire rack and a dusting of baking powder are the secrets to oven-baked chicken legs with shatteringly crisp skin. Tossed in a smoky spice rub and finished with a squeeze of fresh lemon, these drumsticks deliver fried-chicken crunch entirely in the oven.

  • Total Time1 hour 5 minutes
  • Yield6 to 8 drumsticks (serves 4) 1x

Ingredients

Scale

Chicken & Oil

  • 2 pounds (about 900g) bone-in, skin-on chicken drumsticks (about 6 to 8 drumsticks)
  • 1 ½ tablespoons (22ml) avocado oil or neutral cooking oil, plus a little extra for greasing the rack

Crispy Spice Rub

  • 1 tablespoon (12g) aluminum-free baking powder
  • 1 ½ teaspoons (4g) smoked paprika
  • 1 ½ teaspoons (4g) garlic powder
  • 1 ½ teaspoons (4g) kosher salt (such as Diamond Crystal; use 1 teaspoon if using Morton or fine salt)
  • ¾ teaspoon (2g) freshly ground black pepper
  • ½ teaspoon (1g) onion powder

For Serving

  • 1 fresh lemon, cut into wedges
  • Flaky sea salt, for finishing

Instructions

  1. Prep the oven and pan: Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with aluminum foil for easy cleanup, then set a wire cooling rack inside the pan. Lightly grease the wire rack with a little extra oil to prevent sticking.
  2. Dry the chicken: Use paper towels to pat the chicken drumsticks thoroughly dry. Removing as much surface moisture as possible is crucial for crispy skin. Place the dried drumsticks in a large mixing bowl.
  3. Mix the dry rub: In a small bowl, whisk together the baking powder, smoked paprika, garlic powder, kosher salt, black pepper, and onion powder until uniform.
  4. Coat and season: Drizzle the 1 ½ tablespoons of avocado oil over the drumsticks, tossing them well with your hands or tongs until fully coated. Sprinkle the spice mixture over the chicken and toss vigorously again until the seasoning is evenly distributed over every piece.
  5. Arrange on the rack: Place the seasoned drumsticks on the prepared wire rack, making sure they are spaced apart and not touching. This allows the hot oven air to circulate around the entire leg.
  6. Bake: Roast for 45 to 50 minutes. The skin should look deeply golden and blistered. For the best texture, use a meat thermometer to check the thickest part of the leg—it should register at least 175°F to 180°F (80°C to 82°C).
  7. Finish and serve: Remove the pan from the oven and let the chicken rest for 5 minutes. Serve warm with a generous squeeze of fresh lemon juice and a pinch of flaky sea salt over the top.

Notes

  • Why it works: Aluminum-free baking powder alters the pH level of the chicken skin, drawing moisture to the surface where it can evaporate quickly. Combined with the elevated wire rack, this creates maximum crunch without frying. (Make sure your baking powder is aluminum-free to avoid a metallic aftertaste).
  • Temperature tip: While chicken is technically safe to eat at 165°F, dark meat like drumsticks is much more tender and flavorful when cooked closer to 180°F. The higher internal temperature gives the dense connective tissues time to break down.
