Instructions

  1. Season the chicken: In a medium bowl, toss the diced chicken with the smoked paprika, garlic powder, and 1/2 teaspoon kosher salt until every piece is evenly coated.
  2. Brown the chicken: Heat the coconut oil in a large skillet over medium-high heat. Add the chicken in a single, even layer. Let it cook undisturbed for 3 to 4 minutes to develop a nice crust, then toss and cook for another 2 to 3 minutes until browned on all sides and cooked through (an instant-read thermometer should register 165°F). Use a slotted spoon to transfer the chicken to a clean plate, leaving the drippings in the pan.
