  • 2 tbsp (30g) sour cream
  • 1 ½ tbsp (22ml) sriracha
  • 1 tbsp (15ml) fresh lime juice
  • ¼ tsp garlic powder

For the Seared Shrimp

  • 1 lb (450g) large shrimp (16/20 or 21/25 count), peeled, deveined, and tails removed
  • 1 ½ tbsp (22ml) avocado oil
  • 1 ½ tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ¾ tsp kosher salt
  • ¼ tsp freshly ground black pepper

For Assembling the Bowls

  • 2 medium ripe avocados, halved, pitted, and thinly sliced
  • 1 ½ tsp toasted black sesame seeds
  • Fresh lime wedges, for serving


Instructions

  1. Cook the rice: Combine the rinsed jasmine rice, water, and salt in a medium saucepan over medium-high heat. Bring to a rolling boil, then cover tightly with a lid, reduce the heat to low, and simmer for 12 to 14 minutes until the liquid is fully absorbed. Remove from heat and let steam, covered, for 5 minutes, then fluff with a fork.
  2. Toss the salsa: In a medium mixing bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Stir gently until evenly incorporated, then set aside at room temperature so the flavors develop.
