Ingredients

Chili Garlic Sauce

  • 3 Tbsp chili garlic sauce (such as Huy Fong)
  • 1 1/2 Tbsp soy sauce
  • 1 1/2 Tbsp brown sugar
  • 1 tsp freshly grated ginger

Crispy Tofu

  • 1 (14-oz) block firm or extra-firm tofu
  • 1 1/2 Tbsp cornstarch
  • 2 Tbsp neutral cooking oil (like avocado or canola)

Sesame Kale

  • 1 bunch fresh kale, stems removed and leaves chopped into 1-inch pieces
  • 1 Tbsp neutral cooking oil
  • 3 large cloves garlic, minced
  • 2 tsp soy sauce
  • 2 tsp rice vinegar
  • 1 1/2 tsp toasted sesame oil
  • 1 Tbsp sesame seeds

For the Bowls

  • 3 cups cooked brown rice, cooled slightly
  • 1/4 cup roasted unsalted peanuts, roughly chopped
  • 2 scallions, thinly sliced
  • 1 lime, cut into 4 wedges


Instructions

  1. Press and prep the tofu: Drain the tofu and pat it thoroughly dry with paper towels, pressing gently to remove excess surface moisture. Cut into 3/4-inch cubes. Transfer the cubes to a bowl, sprinkle with the cornstarch, and toss gently until all pieces are evenly coated.
  2. Mix the glaze: In a small bowl, whisk together the chili garlic sauce, soy sauce, brown sugar, and grated ginger until the sugar dissolves. Set aside.
  3. Sauté the kale: Heat 1 tablespoon of neutral oil in a large skillet or pot over medium heat. Add the minced garlic and cook for 30 to 60 seconds until fragrant but not browned. Add the chopped kale and toss frequently until wilted and tender, about 4 to 5 minutes. Remove from the heat and stir in the soy sauce, rice vinegar, toasted sesame oil, and sesame seeds. Transfer the kale to a plate and wipe the skillet clean.
  4. Pan-fry the tofu: Return the wiped skillet to medium-high heat and add the remaining 2 tablespoons of neutral oil. Once the oil is shimmering, add the cornstarch-coated tofu cubes in a single layer. Let them fry undisturbed for 3 to 4 minutes until a crisp, golden-brown crust forms on the bottom. Flip and continue cooking until golden on all sides, about 8 to 10 minutes total.
  5. Glaze the tofu: Turn the heat off completely. Pour the prepared chili garlic sauce over the hot tofu. Toss quickly to coat; the residual heat of the pan will thicken the sauce instantly and create a sticky glaze that clings to the crispy crust.
  6. Assemble the meal prep containers: Line up four airtight glass or plastic containers. Divide the cooked brown rice evenly among them (about 3/4 cup per container). Add a scoop of the sesame kale and a quarter of the glazed tofu to each. Top each portion with the chopped peanuts and sliced scallions, and tuck a lime wedge into the corner of each container.
