  1. Mix the glaze: In a small bowl, whisk together the soy sauce, toasted sesame oil, brown sugar, chili garlic sauce, water, and cornstarch until completely smooth. Set aside.
  2. Crisp the turkey: Heat the avocado oil in an extra-large, wide skillet (12 to 14 inches) or wok over medium-high heat until shimmering. Add the ground turkey in one even, flat layer. (If your skillet is smaller, cook the meat in two batches to prevent steaming.) Do not stir. Let the meat sear completely undisturbed for 4 to 5 minutes until the bottom develops a deeply browned, crispy crust.
  3. Sauté the aromatics: Break the crisped turkey apart with a stiff spatula. Add the minced garlic, ginger, and the white parts of the green onions to the skillet.
