Steak & Marinade

  • 1 ½ lbs (680g) flank or skirt steak
  • 2 Tbsp (30ml) avocado oil or olive oil, divided
  • 2 large garlic cloves, grated or minced
  • 1 Tbsp (15ml) fresh lime juice
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp kosher salt

Brown Rice

Bowl Components

  • 1 can (15 oz / 425g) black beans, rinsed and drained
  • 1 cup (150g) frozen sweet corn kernels, thawed and patted dry
  • 1 medium red onion, roughly chopped
  • 1 cup (150g) cherry tomatoes, quartered

Cilantro Yogurt Crema

  • ½ cup (120g) plain nonfat Greek yogurt
  • ¼ cup (15g) fresh cilantro, finely chopped
  • 1 Tbsp (15ml) fresh lime juice
  • Pinch of kosher salt


Instructions

  1. Cook the rice: In a medium saucepan, combine the rinsed brown rice, chicken bone broth, and kosher salt. Bring to a boil over medium-high heat, then reduce the heat to low, cover tightly, and simmer for 40 to 45 minutes, or until the liquid is absorbed and the rice is tender. Remove from heat and leave covered to steam for 10 minutes.
  2. Marinate the steak: While the rice simmers, combine 1 tablespoon of the oil, grated garlic, lime juice, cumin, smoked paprika, and salt in a shallow dish. Add the steak and turn to coat it thoroughly. Let it sit at room temperature for 20 minutes to absorb the flavors.
  3. Mix the crema: In a small bowl, whisk together the Greek yogurt, chopped cilantro, lime juice, and a pinch of salt until smooth. Divide this mixture into 4 small condiment containers with lids and refrigerate.
  4. Sear the steak: Heat the remaining 1 tablespoon of oil in a large, heavy skillet (cast iron works best) over medium-high heat until shimmering. Add the steak and cook for 4 to 5 minutes per side until a dark crust forms and a meat thermometer inserted in the thickest part reads 145°F (63°C) for food safety. Transfer the steak to a cutting board and let it rest for exactly 3 minutes.
  5. Char the vegetables: Do not wipe out the skillet. Lower the heat to medium and add the thawed corn and chopped red onion directly into the residual steak drippings. Let them cook undisturbed for 2 to 3 minutes to develop a dark char, then toss and cook for 1 more minute until the onions soften slightly. Remove from heat.
  6. Slice and assemble: Slice the rested steak thinly against the grain. Lay out 4 shallow meal prep containers to allow the food to cool quickly. Divide the cooked brown rice evenly among them, followed by the black beans, charred corn and onion mixture, quartered cherry tomatoes, and sliced steak. Seal with lids and transfer to the refrigerator promptly, within 2 hours of cooking.
