  • 1 (2-inch) piece fresh ginger, peeled and roughly chopped
  • 1 large jalapeño, seeded if desired, roughly chopped
  • 1 tablespoon fresh lime juice
  • 1 tablespoon ground turmeric
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander

Instructions

  1. Blend the aromatic paste: In a food processor, combine the shallots, garlic, ginger, jalapeño, lime juice, turmeric, cumin, and coriander. Pulse until a finely minced paste forms. If the blades need a little help catching, add 1 to 2 tablespoons of the chicken broth to loosen the mixture.
  2. Sear the chicken: Pat the chicken thighs completely dry with paper towels and season generously on both sides with kosher salt and black pepper. Heat the coconut oil in a large, deep skillet or Dutch oven over medium heat. Place the chicken skin-side down and cook undisturbed until the skin is deeply browned and crispy, 10 to 12 minutes.
