Chicken & Potatoes

  • 1 ¼ pounds (about 565g) boneless, skinless chicken thighs
  • 1 teaspoon kosher salt, divided
  • 1 tablespoon avocado oil (or other neutral high-heat oil)
  • 1 pound (450g) sweet potatoes (about 2 medium), peeled and cut into ½-inch cubes

Honey-Chipotle Glaze

  • 1 ½ tablespoons honey
  • 1 tablespoon unsalted butter, melted
  • 1 chipotle pepper in adobo sauce, minced, plus 1 teaspoon adobo sauce
  • 2 large garlic cloves, finely grated or minced
  • 1 tablespoon fresh lime juice, plus extra wedges for serving
  • ¼ cup loosely packed fresh cilantro, chopped (optional)


Instructions

  1. Preheat the oven: Arrange a rack in the center of the oven and preheat to 400°F (200°C). Pat the chicken thighs dry with paper towels and season evenly all over with ½ teaspoon of the kosher salt.
  2. Sear the chicken: Heat the avocado oil in a large oven-safe skillet (cast iron works great) over medium-high heat. Add the chicken thighs and sear until a golden-brown crust forms, about 3 to 4 minutes per side. Transfer the chicken to a plate (it will not be fully cooked yet).
  3. Brown the potatoes: Reduce the heat to medium. Add the cubed sweet potatoes and the remaining ½ teaspoon of kosher salt to the skillet. Cook for 4 to 5 minutes, stirring occasionally, until the potatoes begin to pick up color from the pan drippings and slightly soften.
  4. Mix the glaze: While the sweet potatoes cook, whisk the honey, melted butter, minced chipotle pepper, adobo sauce, and grated garlic together in a small bowl until smooth.
  5. Bake: Return the chicken and any accumulated resting juices back to the skillet, nestling the meat among the sweet potatoes. Pour the honey-chipotle mixture evenly over the chicken and potatoes. Transfer the skillet to the oven and bake for 8 to 10 minutes, or until the sweet potatoes are fork-tender and an instant-read thermometer inserted into the thickest part of the chicken reads 165°F (74°C).
  6. Finish and serve: Remove the skillet from the oven. Immediately drizzle the fresh lime juice over the chicken and potatoes. Top with chopped cilantro and serve hot with additional lime wedges on the side.
