Chunky Mediterranean Salsa

  • 3 tablespoons fresh lemon juice (from about 1 large lemon)
  • 1 tablespoon honey
  • 2 large garlic cloves, minced
  • 1 teaspoon dried oregano
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 English cucumber, diced
  • 1 pint (about 300g) cherry tomatoes, halved
  • ½ small red onion, finely diced
  • ½ cup (65g) Kalamata olives, pitted and halved
  • 4 oz (115g) feta cheese, crumbled (about ¾ cup)


Instructions

  1. Simmer the quinoa: In a small saucepan, combine the rinsed quinoa and broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 12 to 15 minutes, or until the liquid is absorbed and the quinoa is tender. Remove from the heat and let it rest, covered, while you prepare the rest of the meal.
  2. Mix the salsa and dressing: In a large mixing bowl, whisk together the ⅓ cup olive oil, lemon juice, honey, minced garlic, oregano, salt, and pepper.
