  • 1 lb (450g) lean ground beef (80/20 or 90/10 blend)
  • 2 tbsp low-sodium taco seasoning (or 1 standard 1-oz packet)
  • ½ cup (120ml) beef broth
  • 1 (15-oz / 425g) can refried beans

Burrito Assembly

  • 8 large (10-inch) flour tortillas
  • 2 cups (330g) cooked Mexican-style rice (warm)
  • 1 cup (240ml) store-bought nacho cheese sauce or queso blanco, warmed
  • 2 cups (225g) shredded Mexican cheese blend
  • ½ cup (120ml) sour cream
  • 2 cups (115g) Fritos or thick, coarsely crushed tortilla chips
  • 1 to 2 tbsp neutral oil or butter, for toasting

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and cooked through to an internal temperature of 160°F (71°C), about 5 to 7 minutes. Drain any excess grease.
  2. Simmer the filling: Stir the taco seasoning and beef broth into the skillet. Bring to a gentle simmer and cook for 2 minutes until the liquid thickens. Reduce the heat to low, add the entire can of refried beans, and stir continuously until smooth, cohesive, and heated through. Remove from heat.
  3. Warm the tortillas: Stack the flour tortillas, wrap them in a damp paper towel, and microwave for 30 to 40 seconds. Pliable tortillas are essential so they stretch rather than tear when rolled.
  4. Assemble: Lay a warm tortilla flat on a clean surface. Spoon ½ cup of the beef-and-bean mixture horizontally across the center.
