The Chicken & Bacon

  • 6 slices thick-cut bacon, chopped, divided
  • 1 1/2 lbs (680 g) raw chicken tenders, tendons removed
  • 3/4 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper

The Creamy Ranch Sauce

  • 8 oz (225 g) cream cheese, softened
  • 1 1/2 tsp dried dill weed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 oz (115 g) sharp cheddar cheese, freshly grated (about 1 cup)
  • 4 oz (115 g) Monterey Jack cheese, freshly grated (about 1 cup)
  • 3 medium scallions, finely sliced, divided


Instructions

  1. Cook the bacon: Preheat your oven to 400°F (200°C). In a large oven-safe skillet (cast iron works best) over medium heat, fry the chopped bacon until deeply crisp, about 6 to 8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the rendered bacon fat in the skillet.
  2. Sear the chicken: Season the chicken tenders evenly with the kosher salt and black pepper. Increase the skillet heat to medium-high. Add the chicken to the hot bacon fat and sear for 2 to 3 minutes per side until golden brown. They do not need to be cooked through at this stage. Remove the skillet from the heat.
  3. Mix the ranch topping: In a medium bowl, combine the softened cream cheese, dried dill, garlic powder, onion powder, half of the cooked bacon, and half of the sliced scallions. Mash vigorously with a fork or rubber spatula until thoroughly combined.
  4. Assemble the skillet: Dollop the cream cheese mixture evenly over the seared chicken tenders. (Don’t worry if it doesn’t cover every inch perfectly; it will melt and spread in the oven). Sprinkle the grated cheddar and Monterey Jack in an even layer over the top.
  5. Bake to finish: Transfer the skillet to the preheated oven and bake for 10 to 12 minutes, or until the cheese is bubbling, golden at the edges, and the chicken reaches an internal temperature of 165°F (74°C).
  6. Garnish and serve: Remove from the oven and let the skillet rest for 3 to 5 minutes so the creamy sauce can settle and thicken slightly. Top with the remaining crispy bacon and scallions before serving.
