Garlic Panko Garnish

  • ¼ cup panko breadcrumbs (15 g)

Grilled Chicken

  • 2 boneless, skinless chicken breasts, sliced in half horizontally to make 4 cutlets (about 12 oz / 340 g total)
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp freshly ground black pepper
  • 1 tbsp olive oil (15 ml)

Alfredo & Pasta

  • 8 oz dried fettuccine or rigatoni (225 g; half a standard box)
  • 4 tbsp unsalted butter (55 g)
  • 4 large garlic cloves, finely minced
  • 1 ½ cups heavy cream (350 ml)
  • 2 cups freshly grated Parmigiano-Reggiano (about 4 oz / 115 g)
  • ⅛ tsp ground nutmeg
  • Kosher salt and black pepper, to taste


Instructions

  1. Toast the panko: Heat a large cast-iron skillet or heavy grill pan over medium heat. Add the panko, 1 teaspoon olive oil, and ¼ teaspoon garlic powder. Toast, stirring constantly, for 2 to 3 minutes until golden brown and fragrant. Transfer to a small bowl and wipe the pan clean.
  2. Boil the pasta: Bring a large pot of heavily salted water to a boil. Cook the pasta according to package directions until exactly al dente. Reserve 1 cup of the starchy pasta water, then drain the pasta (never rinse it).
  3. Grill the chicken: While the pasta boils, combine the smoked paprika, kosher salt, ½ teaspoon garlic powder, and ½ teaspoon black pepper in a small bowl. Rub the seasoning evenly over both sides of the chicken cutlets. Heat the 1 tablespoon olive oil in your skillet or grill pan over medium-high heat. Sear the chicken undisturbed for 3 to 4 minutes per side, until deeply browned and the internal temperature reaches 165°F (74°C). Transfer to a cutting board to rest, then slice into strips.
  4. Build the base: Reduce the pan heat to medium-low. Do not wipe it out—you want the flavorful brown bits (fond) left by the chicken. Melt the butter in the pan, then add the minced garlic. Sauté for 30 to 60 seconds until soft and fragrant.
  5. Simmer the cream: Pour in the heavy cream and whisk gently, scraping up any fond from the bottom of the pan. Let the cream simmer gently for 3 to 5 minutes until slightly thickened.
  6. Emulsify the sauce: Remove the pan entirely from the heat (this prevents the sauce from breaking). Gradually whisk in the Parmigiano-Reggiano a handful at a time, letting it melt smoothly before adding the next. Stir in the nutmeg, plus salt and pepper to taste.
  7. Toss and serve: Fold the drained pasta into the creamy alfredo sauce. If the sauce feels too thick, splash in a little of the reserved pasta water (a tablespoon at a time) and toss vigorously until glossy and evenly coated. Divide the pasta into bowls, top with the sliced grilled chicken, and sprinkle generously with the toasted garlic panko. Serve immediately.

  • Why it works: The original restaurant method of using equal parts butter and cream often splits into a greasy mess for home cooks.
