Green Chile High-Protein Chicken Enchiladas

Recipe by Ailene

These creamy, bubbling chicken enchiladas lean on a clever mix of Greek yogurt and diced green chiles to deliver massive flavor while packing over 50 grams of protein per serving. Fast enough for a weeknight, they hit the table with a bright, photogenic crown of quick-pickled red onions to perfectly cut through the rich cheese and hearty filling.

Ingredients

Scale

Enchilada Filling

  • 1 cup (240 g) plain nonfat Greek yogurt
  • 1 can (4 oz / 113 g) mild diced green chiles, undrained
  • 1/3 cup (85 g) refried pinto beans
  • 1 1/2 tbsp (11 g) taco seasoning
  • 3 cups (340 g) cooked shredded chicken
  • 2 cups (225 g) shredded reduced-fat Mexican-style cheese blend, divided

Assembly & Garnish

  • 1 can (15 oz / 425 g) mild red enchilada sauce
  • 8 (8-inch / 20 cm) high-fiber or protein-enriched flour tortillas
  • 1/4 cup (40 g) quick-pickled red onions (store-bought or homemade)
  • 1/4 cup (4 g) fresh cilantro leaves

Instructions

  1. Preheat and prep: Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish. Spread about 1/4 cup (60 ml) of the enchilada sauce evenly across the bottom of the dish to prevent the tortillas from sticking.
  2. Mix the high-protein filling: In a large mixing bowl, whisk together the Greek yogurt, diced green chiles, refried beans, and taco seasoning until completely smooth. Fold in the shredded chicken and 1 cup (112 g) of the Mexican cheese blend until the meat is evenly coated.
  3. Roll the enchiladas: Lay the tortillas flat on a work surface. Divide the chicken mixture evenly, scooping a generous 1/2 cup (about 110 g) in a line down the center of each tortilla. Roll them tightly and place them seam-side down in the prepared baking dish, nesting them snugly against one another.
  4. Sauce and bake: Pour the remaining enchilada sauce evenly over the top, making sure to cover the dry edges of the tortillas so they don’t burn. Sprinkle the remaining 1 cup (112 g) of cheese down the center line of the dish. Bake uncovered for 15 to 20 minutes, or until the sauce is bubbling, the cheese is fully melted and slightly golden, and the center of the filling reaches a safe internal temperature of 165°F (74°C).
  5. Garnish and serve: Remove from the oven and let the enchiladas rest for 5 minutes so the filling can set. Top with the pickled red onions and a scatter of fresh cilantro leaves before serving.

Notes

  • Why it works: Swapping traditional cream cheese for Greek yogurt creates a lush, creamy interior while dramatically boosting the protein. The canned green chiles add necessary acidity to brighten the heavy filling, while a small scoop of refried beans binds the mixture so it won’t break or turn watery in the hot oven.
  • The chicken shortcut: Grab a plain store-bought rotisserie chicken. Stripping the meat from a standard bird yields right around 3 cups of shredded chicken, which is exactly the amount you need here.
