  • 1 teaspoon kosher salt
  • 1 tablespoon (15 ml) olive oil
  • 2 cups (370 g) cooked quinoa or brown rice, warmed

Esquites Corn Salad

  • 2 cups (320 g) fresh or frozen corn kernels, patted dry
  • ½ cup (120 g) plain nonfat Greek yogurt
  • 1 tablespoon (15 ml) mayonnaise
  • ¼ cup (28 g) crumbled cotija cheese or feta
  • 1 medium lime, zested and juiced
  • ¼ cup (15 g) chopped fresh cilantro
  • ¼ teaspoon chili powder

  • 1 large avocado, diced
  • ¼ cup (40 g) thinly sliced red onion


Instructions

  1. Season the chicken: In a small bowl, mix the smoked paprika, 1 teaspoon chili powder, garlic powder, cumin, and kosher salt. Pat the chicken cutlets dry with a paper towel and rub the spice blend evenly over both sides. Set aside.
  2. Char the corn: Heat a large, dry cast-iron or heavy skillet over medium-high heat. Add the corn in a single, even layer. Let it cook undisturbed for 2 to 3 minutes so the bottoms develop a dark char, then toss and cook for another 2 minutes. Transfer the warm corn to a medium mixing bowl.
