Ingredients
- 6 thick slices no-salt-added whole-grain bread
- 1 ⅔ cups 400 g no-salt-added, low-fat cottage cheese
- ¾ cup 110 g fresh strawberries, hulled and quartered
- ¾ cup 110 g fresh blackberries, halved if large
- ½ tsp 1 g fresh lemon zest
- 2 tsp 10 mL pure maple syrup
- Fresh mint leaves (for garnish)
Instructions
- Prepare the Berries: Gently rinse and pat the strawberries and blackberries dry. Hull and quarter the strawberries; halve any large blackberries. Set aside.
- Whip the Cottage Cheese: In a high-speed blender, combine cottage cheese and lemon zest. Blend on high for 75–90 seconds, scraping down once, until completely smooth and airy.
- Toast the Bread: Heat a large, dry skillet or griddle over medium heat. Toast the bread 2–3 minutes per side (4–6 minutes total) until evenly golden-brown and crisp; work in batches if needed.
- Assemble the Toasts: Spread about ¼ cup whipped cottage cheese over each slice.
- Garnish and Serve: Arrange the berries over the cheese, drizzle with maple syrup, and finish with mint leaves. Serve immediately.
